Using ferrous lactate as an iron fortifier and colour retention agent
Ferrous lactate is an outstanding solution to the problems of iron deficiency and attractive colouring in food products. Most commonly found in baby formula and known by a variety of names including Iron (II) lactate and Iron (2+) lactate, this supplement provides a mild flavour and strong source of child safe iron. Contrary to its name, ferrous lactate does not contain milk and is also approved for use in vegetarian or vegan diets. This makes it a versatile and useful option for modern, dietary specific food production. This compound usually appears in a light green powder that is more often than not sweet and mildly metallic in flavour.
