Ferrous Lactate

Ferrous lactate as an acid regulator with minimal taste alteration

Common in the food industry not only as an iron fortification agent, ferrous lactate, equivalently known as iron (ii) lactate, is also very useful as an acid regulator. In situations where flavour alteration can be an issue, such as in sauces, beverages and cheeses, as well as several kinds of meat, ferrous lactate is a preferred method to keep pH levels at appropriate standards without causing flavour alteration. Usually coming as a light green slightly sweet powder, the additive makes very little impact on the finished product, while effectively regulating the acid level across a broad range of production scenarios.
